The simplest definition of OR is, "the study related to maximizing profit or minimizing cost". The pre-req is simply Linear Algebra. Nothing more and nothing less. I'm not sure about what's the trend in industry but it ought to have scope. OR is a fantastic field particularly if you're good at it.

I'm sure companies must hire OR consultants. A lot of people don't have business sense so they fail to grasp the importance of OR.
