Cameras aren't connected with ribbon cables, at least on the One (M7) and the One (M8). Speaking from personal experience as I have been present at the dis-assembly of a One (M8) and have taken apart a One (M7) myself as well.
It's just a very flimsy connector holding the camera in place, that may have gotten disconnected, or damaged/broken.
I assume, the E8 does NOT have a removable back and cracking it open to find out that the cable is indeed fine, but the camera itself is damaged will not be worth the time and effort required to remove the back.
It takes at least half an hour to disassemble an HTC device without damaging the rear case and the metal body, I tried disassembling a One (M7) in a hurry and I ended up bending the rear case and it didn't fit on properly after that.
As for the inability to detect SIM cards, well the internal SIM tray may have broken, or one of the pins may have been damaged since the SIM tray is soldered directly on to the motherboard and not connected with cables etc.
In my opinion, use the phone as an iPod now, since it won't be worth much, will be difficult and expensive to repair and will be sold for a very low price since parts for E8 are not in demand.
Sorry for your loss.
